The Viral Baked Feta Pasta, Turned Into an Actual Dinner

You already know this one. It went around every feed a couple years ago, a block of feta in a dish of cherry tomatoes, roasted until it all collapses into a sauce. It earned the hype. The thing nobody mentions is that as written it is more of a snack than a dinner, a bowl of saucy pasta that leaves you hungry by nine. So we kept what made it good and added a can of white beans, which costs a dollar and turns it into a meal that actually holds you.

What it actually costs

At our Kroger this week, a 16-ounce box of store-brand penne was $1.25, two 10-ounce containers of grape tomatoes were $2.79 each, and a package of feta was $4.99. A 15.5-ounce can of store-brand cannellini beans, the part that makes it dinner, was $1.00. Round out the pan with some red onion at about 40 cents, half a red bell pepper at roughly 80 cents, and a handful of baby spinach from a $2.19 bag, plus the olive oil, garlic, and lemon you keep around.

That is about $14.50 for a pan that feeds six, or right around $2.40 a plate for something that looks like it came off a restaurant menu. The tomatoes and the feta are doing the heavy lifting on cost, so if you want it cheaper, one container of tomatoes and a smaller block of feta still works. The beans are the move either way: a dollar of protein is what separates a side from a supper.

Ingredients

  • 1 box (12 to 16 oz) penne or other short pasta
  • 2 containers (about 10 oz each) cherry or grape tomatoes
  • 1 block or package (6 to 8 oz) feta cheese
  • 1 can (15.5 oz) cannellini or other white beans, drained
  • 1/2 red onion and 1/2 bell pepper, sliced
  • A couple handfuls of spinach
  • 1/4 to 1/2 cup olive oil, 3 to 4 cloves garlic, a squeeze of lemon
  • Salt, pepper, red pepper flakes, Italian seasoning

How to make it

  1. Build the dish. Heat the oven to 400. Pour the tomatoes, sliced onion, and pepper into a baking dish, drizzle with olive oil, scatter the garlic and seasonings, and toss to coat. Clear a spot in the middle and nestle the block of feta in, flipping it once so it is slicked with oil.
  2. Roast until it collapses. Bake 40 to 45 minutes, until the tomatoes have blistered and split and the feta is soft and golden at the edges. This is the whole trick, low effort and the oven does the work.
  3. Boil the pasta. While it roasts, cook the penne in well-salted water to just under done. Save a mug of the pasta water before you drain, because it loosens the sauce later.
  4. Smash it into a sauce. Pull the dish out and mash the feta, tomatoes, garlic, and peppers together with a heavy spoon until it turns into a glossy pink sauce. Stir in a squeeze of lemon.
  5. Fold in the pasta and beans. Add the drained penne, the drained white beans, and the spinach right into the dish, tossing so the spinach wilts in the heat. Loosen with a splash of pasta water if it looks thick, taste for salt, and serve.

It keeps well, and the leftovers are honestly better the next day once everything has gotten to know each other. A little extra lemon or red pepper wakes it back up.

The reason a tray of tomatoes feels like a splurge now is that it sort of is. Fresh produce has quietly become a luxury aisle, which is exactly why a dollar can of beans pulling double duty as the protein matters so much. It is the same idea behind planning five dinners around one grocery run: let the cheap pantry staple carry the expensive fresh stuff.
